  • 1/2 chopped red onion
  • 1/2 chopped red pepper
  • 6 cherry tomatoes
  • 3 eggs
  • 1 teaspoon turmeric
  • 15 grams feta cheese
  • 1 Handful spinach

  • 1/2 chopped red pepper
  • 6 cherry tomatoes
  • 3 eggs
  • 1 teaspoon turmeric
  • 15 grams feta cheese
  • 1 Handful spinach
Turmeric spiced tomato, pepper and spinach omelette
Instructions
  1. Preheat the grill to 180°C.
  2. Heat coconut oil over a medium-high heat in a pan until melted.
  3. Add the onion and pepper, stir for 4 minutes.
  4. Meanwhile, halve the cherry tomatoes, and put to one side.
  5. Whisk the eggs and turmeric in a bowl.
  6. Add the cherry tomatoes and egg mixture to the pan.
  7. Cook for approximately 4 minutes or until the top begins to whiten.
  8. Sprinkle the feta cheese over the omelette, then heat under the grill for 1 minute.
  9. Add the spinach and grill for a further minute.
